Grilled Coconut Cake (Kanom Bah Bin)
Ingredients:
* 1 cup glutious rice flour
* 1/2 cup rice flour
* 1 cup granulated sugar
* 1/4 tsp salt
* 1 large egg
* 2 cups finely shredded fresh coconut
* 1 cup limestone water, scented with bay toey (pandanus leaf) essence or 1 tsp vanilla
* 2-3 tbsp peanut oil
Mix the 2 kinds of flour, sugar and salt and knead with the egg and shredded coconut. Slowly add the limestone water which has been scented with the bay toey or vanilla, and continue to knead until the mixture is wet and the cream from the coconut meat is pressed out and blended in with all the other ingredients.
Grease the heated surface of a griddle with the peanut oil. Drop the coconut mixture in spoonfuls onto the hot griddle, molding them into small flat rounds. Grill over low to medium heat until golden brown. Flip over and grill the other side until also browned. Best served warm.
The coconut mixture can also be baked in a well greased pan in the oven, at 350 degrees for 20-30 minutes, depending on the thickness of the cake. Bursh with a beaten egg yolk over the top after the cake is cooled through and bake another 5 minutes at 400 degrees. Cut into small squares. The baked coconut cake tends to be more gooey in texture.
Cheesey Potatoes
Mix 1 kg hash browns
500 ml sour cream
1 can cream of chicken soup
½ cup chopped onions(or green onions)
1 ¾ cups grated cheese
salt, pepper & garlic
Press into pan and top with ¾ cup of :
bread crumbs & cracker crumbs
¼ cup grated mozzarella
¼ melted butter
Bake at 300-325 for about 50-70 minutes.
We use extra cheese, and extra topping, made with various types of crackers. mmmm. so good.
Butter Tart Squares
Layer One
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup butter or margarine
Layer Two
2 eggs, lightly beaten
1 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
Pinch of salt
1 cup raisins(optional)
1/2 cup chopped pecans (optional)
Combine 1 cup flour and sugar. Cut in the butter until the mixture resembles coarse meal. Press into an ungreased 9-inch square pan. Bake at 350 degrees F for 15 minutes.
Beat together eggs, brown sugar, 2 tablespoons flour, baking powder, vanilla extract and salt. (Stir in raisins and nuts.) Pour this mixture over the base. Bake at 350 degrees F for 25 minutes or until the filling is almost firm. Let cool and cut into small squares.

Caramel Corn

1/2 lb butter
1 cup brown sugar
1/2 cup light corn syrup
2 cups nuts ( almonds whole)
1-175 gram bag Popcorn Twists
Place contents of bag of Popcorn twists into large roaster pan. In a 2 quart saucepan, mix butter , brown sugar, and light corn syrup and cook for 2 mins. Add baking soda, this will cause the mixture to foam. Allow the foam to cook down slightly and then stop cooking the caramel sauce mixture.
Pour caramel over popcron twists and nuts and stir until mixed. Place in a 250 f oven for 45 mins. Stir every 10-15 mins. Remove from oven and pour onto wax paper. Allow to cool and break apart.

Bottom Layer
1.5 cups rice crispies
1.5 cups corn flakes
.5 cup peanut butter
.5 cup corn syrup
.5 cup brown sugar
Mix all these ingredient together and then press into a 9 x 9 pan. (I use a fork dipped into warm water to press down the mixture)
Middle Layer
1/4 cup soft butter
2 Tbsp Bird’s Custard powder
approx 2 cups icing sugar
3 tbsp milk
Mix all these ingredients together until you get a smooth icing. Spread icing over the bottom layer.
Top Layer
2 tbsp butter melted with 4 squares chocolate (or I use Hershey’s chips
and 1/3 cup chips = 2 squares)
Spread over icing and chill.
