3 eggs
2 cups sugar
1 cup salad oil
2 (1oz) squares unsweetened chocolate
1 tsp vanilla
2 cups grated zucchini
3 cups flour
1 tsp salt
1 tsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
1 cup coarsely chopped almonds (probly optional)

Preheat oven to 350 F

1. Beat eggs, Beat in sugar, oil
2. Stir in chocolate(melted), vanilla, zucchini.
3. Sift dry ingredients together
4. Combine with egg/zucchini/almond and mix well
5. Our into two greased loaf pans (9X5)
6. Bake at 350F for 50-60 min. or until done.
7. Cool in pan 15 mins. , then put on racks

Enjoy! (freezes well)
